Would you recommend a jacket like this for skiing in canada or is an insulated jacket not really necessary? Also, what is the waterproof rating for this jacket?

Hey Silas, You could definitely roll with a down jacket in Canada. Especially in the middle of the season riding chairs. Outside of that, it would depend on how warm of a person you are naturally or how much you like to layer. If you get cold easily, then I would grab this for most anything Winter in Canada, even with slight layering. If you are warm all the time, then maybe dial it back to a jacket that has 60 grams of synthetic insulation at most. Also, this jacket is a 10/10 I.E. it has a 10,000mm waterproof rating and a 10,000gr breathability rating. Not too shabby for a down jacket.
