Yeah this board should be just fine with your boot size. As for bindings, if you don't want to spend a lot I would check out the Union forces or if money isn't a big issue just about any pair of flux's would totally rock on this board

5'8 & 110.. whoa I bet she's a hottie... you should check out the sacred feminine at illuminatisnowboards.com ... they are really sweet and I'd say it's one of the best boards out there for the $. Out of the 3 or 4 boards I put my girl on, she likes this one the best. Says it's super responsive for here and the most comfortable board to ride on when we aren't in the park. I'd say check out the 155's for her.
If they are out of those boards on the site, I would look into a Neversummer for her. Around a 155, or maybe a 152. Those boards are a little heavy, but they are amazing to learn on and almost never 'chatter' on the snow
It depends on your skill level... I'm 6'2 and I can ride anything between a 155-170. But my park board is a 159, cause it's big enough I'm not scared of a little pow pow and small enough for me to throw sweet stuff with. So, I would say look in the 155-160 range, and you'll be safe (depending on your weight too... aka more weight = bigger board).
