and how well does 20k waterproofing hold up compared to Gore-tex 3L softshell?

I would go for the XL's. I'm 6 feet tall, 165 lbs and wear larges for a baggy fit. Gore-tex is rated at 20k, so you'll be all good. The 20k waterproofing on these bibs will be completely waterproof.
